Hawaiian Haystacks (Joycelyn)



Ingredients

2 cups long grain white rice
4 cups water
1 pounds skinless, boneless chicken breast halves
1 (10.75 ounce) can condensed cream of chicken soup (I used Cream of Celery)
1 1/2 to 1 3/4 cup chicken broth
1 cup sliced olives
3/4 cup shredded Cheddar cheese
3/4 cup chopped tomatoes
3/4 cup chopped green onions
1 cup pineapple chunks, drained
1/2 cup unsweetened flaked coconut
1 cup chow mein noodles
Optional--any other veggie of you choice

Directions

1. Place rice and water into a saucepan, and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender. Set aside.
2. Meanwhile, place the chicken breasts into a saucepan with enough water to cover. Bring to a boil, and cook until tender, 20 to 30 minutes. Remove from the water and shred or cube.
3. Return the shredded chicken to the saucepan, and stir in soup and chicken broth. Simmer for 15 minutes.
4. To serve, place one cup of cooked rice onto a plate, spoon some of the chicken mixture over it, then top with small amounts of Cheddar cheese, tomatoes, green onions, pineapple chunks, coconut and chow mein noodles.

Casserole in a Pumpkin Shell (Laura S.)



1 med pumpkin, cut out a lid and clean out
2 lbs hamburger
4 potatoes cubed
3 carrots, grated or chopped
1 med onion chopped
2 tsp salt
1/2 tsp oregano
1 tsp vinegar
1/2 tsp garlic powder
1 can tomato soup
3 eggs beaten

Place pumpkin on a cookie sheet. Bake at 350 degrees for 45 minutes. Pumpkin should remain firm. while baking put together casserole mixture.
brown hamburger and onion. Cook Potatoes and carrots until tender. Mix spices, tomatoe soup, and eggs. blend together.
Pour over meat and vegetable. mix.
Pack into pumpkin with lid on. Return to oven and bake at 350 degrees for 1 to 1 1/2 hours. the last 20 minutes take lid off stir and continue to bake.
When serving, if you like pumpkin you can scrape the edges if you don't you can just eat the casserole.

Chicken Pot Pie (Laura J)


2 cups cooked diced chicken
2 cup cooked bite sized carrots
3 cup diced potatoes(cooked a little)
1 can sweet peas (or frozen)
2 cans chicken gravy (I used 2 mix packets)
Mix veggies, chicken, and gravy in 9 x 13 pan. Top with 1 pkg of Stove Top Stuffing prepared according to package directions. Cook in 350 oven for 20 minutes.

Mexican Beef and Chip Casserole (Joycelyn)


1 lb. ground beef
1 sm chopped onion
1 minced clove garlic
1 can cream of celery soup(10 3/4oz.)
1 can (4 oz.) chopped green chilies
1 pkg (6 1/4 oz) crushed corn chips
1 can (10 oz) mild enchilada sauce
2 cup shredded Monterrey jack or cheddar cheese
Cook beef,garlic,and onions. Stir in soup,chilies,and enchilada sauce. Layer crushed corn chips, then meat mixture,and cheese in 12x8 baking dish. Repeat layers. Sprinkle with chips and cheese. Heat in 350 oven 15-20 minutes. OR Microwave uncovered 10-12 minutes in the microwave until hot and bubbly.
